Ingredients:

  • Half grain rice: two glasses
  • Sugar: four glasses
  • Rose water: half a glass
  • Sliced almonds: 100 grams
  • Slice pistachios: 100 grams
  • Butter: 100 grams
  • Brewed saffron: two tablespoons
  • Cinnamon: for decoration

Cooking steps:

First, we clean the rice and put it in a big bowl and pour water on the rice and gently turn the rice upside down with our hands and put the water out and put water on the rice again and that’s it.  Do it again.

Repeat this several times until the rice water becomes clear and the rice is completely washed, then empty the water and put 1 glass of rose water and 1 glass of water on the rice and leave the bowl aside for a while. Soak the rice well for 30 minutes.

Put the almonds into a bowl of water and let them soak well and remove their brown skin easily. After 30 minutes of soaking the rice with a mixture of water and rose water, we pour 8 glasses of water into the pot prepared for cooking the yellow rice.

Then put the pot on high heat so that the water boils faster and then put the mixture of rice, water and rose water into the pot so that the water boils again. And reduce the heat to cook the rice.

Then test a little of the rice, if the surrounding rice is soft and the core is a little hard, add sugar and stir the ingredients well so that it does not stick to the bottom. After the sugar dissolves in the ingredients, we continuously stir the yellow husk so that it does not stick to the bottom.

Then peel the almonds and cut them in half so that they become slices and keep a little of it aside for decoration and put the rest into the pan. Add the brewed saffron to the yellow husk.

Then stir until it reaches the desired consistency. When feel that the it has reached the desired concentration.

If the consistency is good, add the butter to the it and turn off the flame after 5 minutes and allow it to cool. If it is still loose and has not reached enough concentration,  will give it time to cook more.

At the end, put it in the desired container and decorate with cinnamon or coconut powder and almond or pistachio slices.
